WThis is a home-style version of a cocktail from our latest drinks list. It's a batch premix which is bursting full of flavours of a festive period, which makes it excellent for a celebration. Reserve the remaining syrup you can use for brunch beverages, desserts, or for additional servings of the drink.

Bikini Recipe

Makes enough for 10 people

To make the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Syrup: Combine the listed components into a pot, heat until it reaches a simmer, agitating to dissolve. After that, turn off the heat allowing it to reach room temperature fully. Decant to a sealable bottle, close it and store in the fridge, it will last for up to four weeks.

Preparing the Cocktail Base: Pour all the spirits and syrup into one sizeable container, leave to sit for 60 minutes, then pass it through best through cheesecloth, to ensure it's completely strained.

To serve: Measure 85ml from the cocktail base into your cocktail shaker containing ice, and stir gently for about 60 seconds to cool it down. Filter to a cold coupe glass or equivalent, top with a few cranberries adding the final touch by giving it a brief mist of the essential oil over the top.
